Got some arrachera and made a quick guacamole

I put onion, jalapeño, tomato and lemon with some salt and pepper and let it sit for a little so the lemon soaks into the onion along with jalapeño

Then I added avocados

I cooked up the meat on a pan, I don’t own a grill currently

I keep the meat in a cast iron dutch oven and use my electric griddle to cook the tortillas.

Once everything is cooked I grab one tortilla at a time and use some scissors to cut some meat for the taco. Then I add the guacamole and some store bought salsa from the deli

These are my favorite foods, wow it looks good! The veg looks fantastic, so does the meat, cast irons rock. I also don’t have a grill, but the cast iron does a good job charing stuff.

Corn has been in season, so I’ve been shucking two of them into the pan with a touch of oil until they brown and cook. I use a lid and steam it a bit at the end. It takes a bit of time to get roasted right. Once done, I like to cut the corn off the cobb and add it to salads, this ones my favorite,

diced: 2 fresh jalapenos, 1 whole red bell pepper, 1 large cucumber, or two small, 1/2 white or red onion, cilantro, 2 ears of roasted corn + Oil, lime juice, salt, pepper and enough paprika you can see the color
